Red Velvet Pancakes - Valentines Day just got tasty..

The way to a man's heart is through his stomach - my only gripe with this theory is that i don't think it apply only to men, what about the ladies. You want to win me over, feed me, cook for me, or take me out to eat...

With valentines day 3 days away when would be a more perfect time to try these out, *
I don't have an oven, (if you are a baker you will understand how much this pains me) and pancakes seem to be the next best thing...

Red Velvet Pancakes

1 cup flour
1 teaspoon baking powder
½ teaspoon baking soda
½ teaspoon salt
3 tablespoons sugar
2 tablespoons unsweetened cocoa powder
1 large egg
¾ cup buttermilk
¼ cup sour cream
1 teaspoon red food coloring (or more if you want them more red!)
2 teaspoons vanilla extract

Combine all dry ingredients in a large bowl and set aside. In a separate bowl, whisk together the egg, buttermilk, sour cream, food coloring and vanilla. Add wet ingredients to dry, and mix just until combined.
Pour about 1/3 cup onto medium/high griddle and lightly brown on both sides.

* note regardless of valentines day, these can be made at anytime day or night.. :)
